Favourite Recipe: Baked Asparagus Fries

I love the internet. The End. haha….I love all the things you can find on it– one of those being a really good but simple recipe I found here for asparagus. Read on 🙂

    BAKED ASPARAGUS FRIES


    ½ cup sliced almonds— (I had slivered so used those)
    1 cup Panko breadcrumbs— (I added an extra 1/2 cup)
    1 bunch of asparagus—snap off the tough part at the bottom of the stalk (discard that part) –break the rest in half
    ¾ cup all-purpose flour
    2 eggs-beaten
    Salt & pepper to taste

1. Preheat oven to 375F and line cooking sheet with parchment paper

2. Place almonds & panko in a small bowl and crush together (or use a food processor and pulse) until almonds are finely ground and mixed in

3. Dredge cut asparagus in flour, shake off excess, dip into egg wash, and cover with panko mix until coated

4. Put each piece onto parchment lined pan and season with salt & pepper

5. Bake 15-20 min (I did closer to 20min)

This recipe was a hit with 3 out of 4 of us–the exception was the asparagus hater. The rest of us loaded up our plates a few times with the youngest one in the family eating the most. Gotta luv it 🙂

NOTE: The original source also gives 3 dip recipes to make. I didn’t feel like going through the extra effort and just opened up the fridge. I used Sweet Chili sauce & Garlic Aioli that I already had.
