Favourite Recipe: Peanut Butter Crispy Squares

Here’s one for the kiddies……….or the peanut butter/chocolate addicts out there (I know one personally)! I came across it while wandering through the local Canadian Tire. Yes, that’s right…..Canadian Tire 😉
I was in the kitchen appliance area and there was a rack of “Company’s Coming” cookbooks staring at me. I picked up a volume on “squares” and it was the first recipe that opened up. Fate. Yum Yum 🙂


    Peanut Butter Crispy Squares

    1 can sweetened condensed milk (150ml)
    ¾ cup brown sugar
    ½ cup golden corn syrup
    ½ cup Peanut Butter (smooth)
    8 cups rice krispies cereal

    Topping:
    1 cup chocolate chips (semi-sweet or dark)
    4 tbsp Peanut Butter (smooth)

1. Combine first 4 ingredients in large pot over low heat. Melt and stir. Remove from heat.
2. Add cereal. Stir until coated. Butter 9 X 13 cake pan and press firmly with buttered hands. Let set for ½ hour.
3. In microwave, heat chocolate chips for 20 seconds, stir, repeat until melted. Add peanut butter, stir. Spread over cereal with a spatula. Let set for an hour.

NOTE: I doubled the recipe. You can 1/2 it to the original and put it in a 9 X 9 pan instead.
